Ali Nyang was the Star matchwinner on his first team debut, scoring three times to sink the Nurserymen at East Street.
The Gambian striker headed his side into the lead from a Phil Anderson free kick after 16 minutes, but a minute later Paul Munday hauled Olney on terms after sloppy defending by the visitors.
Nyang restored Star's lead on the half hour, taking a return pass from Ronnie Fortune and beating three defenders before netting with a right foot shot.
Adam Scotcher hit the post for Star before the interval and Nyang completed his hat trick six minutes into the second half, rounding keeper Jason Wright before slotting home with his left foot this time.
Karl Gibbs completed the scoring for Star with a minute of the match remaining, Nyang the provider this time.
